Cook 1 hen (about 5 lbs) in water until tender
Cut meat into big pieces- save broth
Heat olive oil in frying pan- add 2 C rice and the following (diced):
1 large green pepper
2 large onions
Fry until rice is yellow
Transfer to large pan
Add 3-4 tomatoes (or a can), chicken, hit red peppers (3-4 according to taste), salt, pepper, and 1 tsp chili powder.
Cover with chicken broth and cook slowly til rice is tender (check rice in 10 minutes)
Then add 2 C peas or fresh, sautéed mushrooms and one medium bottle of stuffed olives, sliced.
Before serving add 2 avocados, cut into hunks on top of casserole. (If out of season, sprinkle chopped almonds on top)
