Curried Stuffed Peppers

Serves 6

Cook 1/4 C rice in 1 quart boiling water-salted.

Rinse rice in cold water and mix with the following:

  1. 1 lb. ground beef
  2. 1 medium onion, diced
  3. 2 T C&B curry powder (I don’t think they make C&B curry powder any more, so this is one that I love)
  4. 4 T milk
  5. 2 tsp salt
  6. Pepper to taste


  1. Stuff this mixture into 6 green peppers which have tops and seeds removed
  2. Place in casserole dish and cover with 1 18oz can C&B tomato juice (again, any tomato juice) or cream of tomato soup
  3. Bake at 350º for 1 hour
