Beef Tartar


1 16oz lean, trimmed sirloin steak

1/2 C lemon juice

6 anchovy filets, mashed

1/4 C olive oil

1/2 tsp salt

1/2 tsp pepper

1 tsp prepared mustard

1/4 cup capers

pitted black olives


  1. Grind steak twice just before doing rest of it
  2. Mix beef with 1/3 C lemon juice and let stand in refrigerator for one hour
  3. Beat anchovies and oil until creamy, then mix with meat
  4. Add salt and pepper and remaining lemon
  5. Form into 4 mounds and garnish with capers and olives or make tiny balls for hors d’oeuvres
