Italian Meat Loaf

Makes 8 servings


Meat Mixture:

1 1/2 lb ground beef

1/2 C cracker crumbs (about 4 crackers)

1 6oz can of tomato paste

2 eggs

1/2 C chopped onions, softened

1/4 C chopped green peppers, softened

2 cloves chopped garlic, softened

3/4 tsp salt

dash pepper

Filling Mixture:

1 12oz carton of cottage cheese or ricotta cheese, can also use cheddar cheese and mozzarella

1 3oz can of chopped mushrooms, or 1/2 C fresh

1 T snipped parsley

1/4 tsp oregano


  1. Combine meat ingredients, put 1/2 mixture in bottom of 8x8x2″ baking pan
  2. Combine filling ingredients
  3. Spread half of filling evenly over meat in pan
  4. Repeat the two layers
  5. Cover with tomato paste
  6. Make in moderate oven (350ºf) for 1 hour
  7. Let meat loaf stand 10 minutes before serving
