Pat’s Layered Chicken & Tortilla Casserole

You guys, I had to leave out some specific calls for certain kinds of cheese. I just couldn’t do it. So, use whatever type of shredded cheddar cheese you like. If it happens to be in a large block wrapped in silver and in a yellow box, or possibly in liquid form in a jar, go for it. You do you.


13×9″ glass baking dish

3C cubed chicken- saute in butter

1/2 onion, chopped

1/2 C celery, chopped

1/2 green pepper, chopped

1/2 C salsa

2 C shredded cheese

1 small can corn

1 small can sliced black olives

1 small can chopped pimentos

1 can Cream of Chicken soup

1 tsp Cumin

1/2 Tbsp chili powder

Salt and pepper to taste

Corn tortillas



Preheat oven to 325º F

Combine sautéed chicken with softened onions, celery, green pepper and salsa in a large bowl

Mix in remaining ingredients, except tortillas and half of the cheddar cheese

Place tortilla to cover bottom of grease baking dish

layer half of the mixture over the tortilla.

Repeat with another layer of tortilla and mixture

Cover with remaining cheese

Bake for 20-30 min
